QUALITY, REGULATION AND KNOW-HOW

Since the beginning of our activities, we select with requirement and rigor each of our suppliers to supply us with the best ingredients. In the framework of a trusting partnership established with a large number of them, we develop a responsible purchasing policy and continue to favor suppliers who are themselves producers in order to guarantee optimal quality.

Food hygiene and consumer protection regulations are a daily commitment and we take all the necessary steps to ensure that our suppliers do the same. We track the history, use and composition of all our products, from raw materials to the finished product. Checks are regularly organized by outside organizations in our workshops. The list of allergenic ingredients used in the composition of each of our recipes is available in store and on each product sheet for the information of our consumers. Regarding eggs, we have already started work to promote the use of eggs and ovo-products from hens raised outdoors. In fact, we are continuing this work so that all of our supplies are, by 2025, guaranteed off-cages, in accordance with legislation.

Our production, remaining artisanal, is based on the know-how and experience of our pastry chefs and our chocolatiers, all guided daily by our Chefs Cyril Lignac and Benoît Couvrand. With the professionalism of our craftsmen, we attach great importance to the transmission of our know-how to trainees and apprentices who join our teams each year.
